First attempt.

My roommate came in my room earlier and cracked up over my Mr. Winkle calendar:

He's such a goofy dog! I think it's hilarious.

OK! Done with studying! I'm as ready as I'll ever be.

Tonight was comprised of some successful cooking endeavors and some... uhhh... Yeah I'll get to that.

For a snack earlier I had some Lotsa Lemon Stonyfield yogurt with some Kashi Vive.

Dinner was Spicy Chicken Sausage and Broccoli Pasta
  • 2 oz. whole wheat spaghetti
  • 1 1/2 T olive oil, divided
  • 1 clove garlic, minced
  • 1 c. broccoli
  • 1 link TJ's Jalapeno Chicken Sausage, chopped
  • ground red pepper flakes, to taste
  • 1 T grated parmesan
Cook pasta according to directions. Meanwhile heat 1/2 T oil over medium heat, add garlic and cook until soft. Add broccoli and sausage and cook until heated through and sausage begins to brown. Sprinkle on pepper flakes and toss. Drain pasta and add to sausage mixture, add remaining olive oil. Toss and serve topped with parmesan.

I've made this a few times, so I had it down :) Later on, however, I decided to try to make Maple Cinnamon Almond Butter from The Hungry Yogini's blog. Yikes. I didn't have enough almonds, tried to compensate by reducing the other ingredients and just really didn't make it work. The almonds were over-roasted and when I ground them up, they just didn't make the right consistency. I thought about keeping what I made, but ended up tossing it. I hate wasting food :( Oh well, I WILL try again and I WILL make it!

To make up for it, I had a chocolate VitaTop with Dark Chocolate Dreams. Not pictured though, I was still wallowing in my AB disappointment ;)

Tomorrow is back to classes! I hope I can snap myself back into reality! Good night!

  1. Oooh, that pasta looks really yummy! It's really hard to find chicken sausage in England for some reason. When I do, I usually end up throwing it in pasta like this. I've never used broccoli with it though. So nutritious!
