Run, run, run!

I don't know how I get myself into these predicaments, but I am going to be moving moving moving non-stop until I leave for home today. I've already gotten up, eaten breakfast, done yoga. Now I need to blog, pack, meet my friend for lunch, go to an appointment, go to the bank, return a video... yikes, probably more that I'm forgetting about.

Since I'm eating lunch a little earlier than usual, I decided to stick to a small breakfast.

Whole wheat english muffin, 1/2 AB, 1/2 lemon curd. Also had a glass of skim milk (I can't stand leaving a lot of milk in the fridge if I'm not going to be around for a few days).

For yoga, I tried the 45 minute Gentle Hatha Flow #2. I am seriously so glad that I am doing yoga every day, even though I'm only on day 6. Hopefully I can get the weekend in. That's what I've been a little worried about.

Alright, sorry for the short post. I need to get stuff together! But don't forget to check out the new Foods that Fit site! And an awesome giveaway! I'm not sure how much I'll be able to post this weekend, but I'll def be back by Monday morning at the very latest! Happy weekend :)

A Winter's Tale.

This day was sooo long. This semester has been a roller coaster ride, and I am so glad that it's my last (well, of undergrad...).

Since last I posted, I went to class, armed with my packed lunch/snacks:

Comprised of Thomas' mini cinnamon raisin bagel w/ almond butter, apple, and an Almond, Walnut, Macadamia nut Kind bar (which was good! Loved the crunch, even though I thought I might take a front tooth out.).

In yoga class we didn't actually do yoga; we worked on out group flows that we're creating for our midterm. Fun, but I needed yoga, so I did the 20 minute Hip Opener flow from Yoga Download. Nice. I'm so glad that I found this site! And proud that I'm still going strong on the 5th day of the yoga challenge!

I had a small time frame to eat dinner since I needed to meet friends at the play at 7:00. I wasn't that hungry, but I knew that if I didn't eat I would be starving in the middle of the play, and you DO NOT want to be stuck during intermission with an empty belly, wishing that you could eat something.

I threw together a bunch of leftovers. Some naan with Smart Balance to start:

And then roasted brussels sprouts and Thai pilaf from earlier this week.

It was good and I am so glad that I ate before. The play was so good. One of my friends was the lead and he was great. I used to do theatre a lot and I always thought that I would go to school for it, but when I got here I just realized that it wasn't what I wanted to do with my life. It still makes me a little wistful when I go to shows, though.

Dessert was a Dark Chocolate Kozy Shack with Tru Whip. I am becoming more and more impressed with this whip as I try it more.

I really need to get some shuteye tonight. I am traveling home tomorrow after some appointments and such, so beauty sleep is a must! And sorry about the hastiness of this post-- this day was a whirlwind! I promise better photos and such in the near future :)

Rise and try to shine.

Oh my gosh, I am so glad that it's Thursday. Last day of classes for the week, but that also means that I really need to start moving on my 2 exams and project due next week. At least they're not after Spring Break, right?

I don't know why getting up has been so difficult for me the past few days. I've also had some trouble sleeping, so it might be because of that. But in that case, I wonder why that's been happening. Hmmmm.

I'm getting a *little* bored of oats, but I couldn't wrap my head around anything else this morning.

1/2 c oats
  • 1/2 c skim milk
  • 1/2 c H2O
  • flax
  • brown sugar
  • lemon curd
  • blackberries
  • walnuts
It was still good, even if I am getting a little bored of them. It's been a while since I've made them sans banana, and it is amazing how much volume the banana adds!

I don't have class for a while, so I need to find a way to make myself productive for a couple hours. Or not. We'll see :)

Bad girl.

Geez, I can't believe that I haven't posted since this morning. And that it's almost midnight! I try not to do the stereotypical up-all-night-college-student thing, so this is getting late for me ;)

Yoga today was 45 minutes of gentle hatha flow from YogaDownload. I really liked it. Definitely my favorite so far from their site.

Afterward, it was time to try out the Griddler again! Since I don't have many great ingredients right now, I decided to make a simple tomato, mozzarella, basil panini.

It's on multi-grain bread with a little olive oil. So yummy, but I can't wait to experiment more! I also had some carrot sticks on the side.

Here's where I feel like a bad girl. I packed myself a yogurt and a Kashi bar for snacks for my Help Center shift, but... totally blew off the yogurt for another cupcake. I felt a little too indulgent today, and definitely not the healthiest. Oh well. I'll pick up tomorrow.

Dinner was baked flounder (just olive oil, lemon juice, s+p, and paprika) and a sweet potato with Smart Balance.

Study snack was a mix of Kashi Vive and TJ's Chocolate Decadence, which has REAL chocolate curls in it!! I had thought that the photo on the box was a serving suggestion. Oh my goodness...

I am supposed to go to a play tomorrow night, but I don't know how I feel about it looking at all the studying and work that I have ahead of me. Hopefully I'll figure it out in the morning. Good night!

Oldies, but goodies.

The 6th folder, 6th picture thing that I got from Essential E: I had to cheat a little because my first few folders don't have enough pics. This is from July 2006 at my work's annual employee breakfast. After the breakfast, we still needed to work, so we went into one of the walk-in freezers to change into our work shirts. This is a pic of me and my friend Ariel looking shady about it. Dumser's lovin' :) (Also I think it's funny whenever I come across pics of myself when I had dyed my hair black. Goodness).

I could not pry myself out of bed this morning. I was having funky dreams all night and I don't think I slept so great. I eventually got up, though and made some oatmeal!

1/2 c oats
  • 1/2 c skim
  • 1/2 c H2O
  • 1/2 banana
  • LOTS of cinnamon
  • brown sugar
  • TJ's Golden Berry Blend
  • walnuts
  • AB
I really wanted something super cinnamony today. Delish. I need to get around to yoga. My class was canceled today, so all I have to do is my Help Center shift at 2. Better get moving!

Grillin' and bakin'.

Once again, I think that I was pretty productive today. I am amazing myself at how focused I've been, but still giving myself time to do things that I enjoy :)

Like I said, I REALLY wanted to try out the Griddler tonight. Unfortunately, I don't really have any grillables. I settled for making the pan-fried tofu and grilling some zucchini to throw in.

I served it on top of the Thai Pilaf from TJ's which was made with lime and coconut milk. Yum. This dish had so many fun flavors in it. I love the spiciness and the lime together :)

Also served with TJ's Naan, from the frozen section, with some Smart Balance. Also: yummm.

After dinner I needed a little chocolate boost, and I really didn't drink much of my cocoa earlier so I got into a few dark chocolate kisses.

But here comes the best part. In an attempt to win over my oven after my failed AB, I decided to attempt making cupcakes based on this recipe. I used Dark Chocolate Dreams instead of Nutella, though.

Here's the batter. It was more like a muffin or quick bread:

Batter topped with PB:

Swirled it in:

20 minutes later:

Annnd of course I ate one :) Here's what it looks like inside:

Very good. I feel kinda guilty, like I canceled out my good workout that I had earlier, but I need to just be ok with it and realize that my HC buds are going to be some happy campers when I show up with these bad boys.

Alrighty, time to wind down. If I don't I'll be wired all night!

Happy dance!

I am in such a good mood right now!
  1. Yoga was AWESOME today.
  2. I took care of some odds and ends that I'd been putting off
  3. Exam is over (Woo Hoo!)
  4. THE GRIDDLER ARRIVED!!!!
Let's start at the top. Today in my class, the instructor decided to take us on a "trip" to Africa. She played songs from Africa and we did a lot of themed poses (Gorilla, Lion's breath, Heron, etc.). It was a really FUN class. Plus, I did crow for the longest that I've ever held it! Yay!

When I got home, the Griddler was here waiting for me. Now since it's here I don't have anything to really cook on it, but I will DEFINITELY figure something out for dinner. And maybe a panini tomorrow for lunch?

I've been munching on my packed snacks all day:

1/2 almond butter sandwich on yoga bread (that's the end of my loaf!), Cherry Cashew Pure Bar, apple, carrot sticks. I also had a French vanilla Stonyfield with some TJ's Chocolate Decadence cereal, but completely didn't take a picture. Oops! The Pure Bar was good, but I think I liked my Lara Bar better.

Now that I'm home I feel like I have a lot of little things to take care of. I feel ready though, energized I guess. Probably have my cuppa cocoa and get started!
