More PROTEIN!!

Oh goodness, here we go again. Couldn't the snow have just kept school closed for the rest of the week? Or semester? Til graduation? Oh well, at least we're getting some warmer weather later in the week.

Since it's exam day, I wanted to get some more protein than I usually do. I subscribe to the idea that protein makes my brain work harder, and I'll take that! It wasn't the most exciting breakfast, but I think it's going to do the trick:

Smart Ones Egg Whites and Cheese on english muffin, kiwi, and blackberries. The sandwich was better than I had been expecting. I've had them in the freezer since before I quit WW, and it doesn't have the prettiest ingredients (HFCS! ick), but I don't want to waste them.

Hopefully this is an easy day. I have a feeling that the gym might be rough after my routine was disrupted so much. Happy Monday!!

First attempt.

My roommate came in my room earlier and cracked up over my Mr. Winkle calendar:

He's such a goofy dog! I think it's hilarious.

OK! Done with studying! I'm as ready as I'll ever be.

Tonight was comprised of some successful cooking endeavors and some... uhhh... Yeah I'll get to that.

For a snack earlier I had some Lotsa Lemon Stonyfield yogurt with some Kashi Vive.

Dinner was Spicy Chicken Sausage and Broccoli Pasta
  • 2 oz. whole wheat spaghetti
  • 1 1/2 T olive oil, divided
  • 1 clove garlic, minced
  • 1 c. broccoli
  • 1 link TJ's Jalapeno Chicken Sausage, chopped
  • ground red pepper flakes, to taste
  • 1 T grated parmesan
Cook pasta according to directions. Meanwhile heat 1/2 T oil over medium heat, add garlic and cook until soft. Add broccoli and sausage and cook until heated through and sausage begins to brown. Sprinkle on pepper flakes and toss. Drain pasta and add to sausage mixture, add remaining olive oil. Toss and serve topped with parmesan.

I've made this a few times, so I had it down :) Later on, however, I decided to try to make Maple Cinnamon Almond Butter from The Hungry Yogini's blog. Yikes. I didn't have enough almonds, tried to compensate by reducing the other ingredients and just really didn't make it work. The almonds were over-roasted and when I ground them up, they just didn't make the right consistency. I thought about keeping what I made, but ended up tossing it. I hate wasting food :( Oh well, I WILL try again and I WILL make it!

To make up for it, I had a chocolate VitaTop with Dark Chocolate Dreams. Not pictured though, I was still wallowing in my AB disappointment ;)

Tomorrow is back to classes! I hope I can snap myself back into reality! Good night!

Slacking.

I think that a lot of my friends viewed the snow day as a way to catch up on work and get stuff done... It's 4:30 and I still haven't looked at my books. I did clear the snow off of my car, does that count?? I also got my yoga in-- 20 minutes of Core Yoga from Yoga Download. It was alright, but it didn't feel like yoga. It felt more like aerobics class. Good for my abs though, I hope :)

At least being home means a non-packed lunch! This one was similar to the Greek sandwich that I made a while ago. I think that I just really want the Griddler to get here!!

This was 2 slices of TJ's Whole Grain Fiber Bread, feta, tomatoes, kalamata olives, and mozzarella.

I also had a cuppa cocoa with TruWhip after my venture into the snow. I've never been in so much snow! It's kinda cool (hahahahaha, I'm punny).

OK! After I post this, I AM STUDYING. I need to for my exam tomorrow!!

Winter wonderland!

WOOOOOOO!! SNOW DAY!!!! See, I knew that wearing the PJ's inside out would work :) Apparently we have about 8", which is the most snow I think I've ever been in!
I got the text message from school at about 5:30 this morning and then miraculously slept in until almost noon. Ahhhh. That's OK though because I was tossing and turning a lot last night.

No pre-breakfast yoga today! Way too hungry when I woke up, so I made this:

In the bowl: 1/2 c. oats, 1/2 c. milk, 1/2 c. water, 1/2 banana, flax, brown sugar, cinnamon, Ambrosia Blend trail mix (sunflower seeds, almonds, cranberries, raisins, and apricots), and my buddy almond butter.

I don't usually take photos of my a.m. coffee (decaf!), but I got this new mug and it's purdy.

Today will continue the studying trend. I've pretty much got a 4-day weekend situation. Enjoy your day off if you got one!! Stay warm!!!

No snow?

Where's this snow? All of the news and weather agencies are going nuts, but not much has been happening (I am partially saying this in hopes that it starts blizzarding any minute to spite me).

I do believe that I finished all of my chores for the weekend! Yay! I love feeling set and ready for the week. Besides that, I got some good eats in tonight :)

I tried a recipe that I hadn't made in about a year: Tofu Parmigiana. It's really simple and delicious! I had sort of forgotten about it and then remembered during my hunt for tofu recipes.

I also made roasted brussels sprouts a la Carrots n' Cake.

These were so good. Confession: I had never had brussels sprouts before. I think I was scared because of the bad reputation, but apparently they're one of my mom's favorite foods so I have no idea why they didn't pop up when I was a kid. I will definitely be making more this week :)

And of course dessert. I can't go a day without it. I settled on a chocolate VitaTop with almond butter.

I also sampled some new chocolate cereal that I got from TJ's. It's good, but I'm worried about when I'll eat it because it's 250 cals in 3/4 c., which feels like a LOT for cereal. I'm thinking mix-in.

I'm going to continue praying for snow for the rest of the night... maybe I'll turn my PJ's inside-out ;)

Beat the snow!

Alrighty. I beat the snow. I didn't realize that we are supposed to be getting over 6", so it would be nice if classes are canceled tomorrow :)

I went over to the Potomac Adventist Book and Health Food Store (finally!), but I didn't actually end up buying anything. I felt a little overwhelmed by the crowd of people and I like to have the chance to slow down and browse. Plus I didn't really need much that they had. Another time, especially if I keep seeing it on Foods That Fit. I did go to TJ's though, and picked up some odds and ends that I knew that I could get cheap there.

I picked up a few bars that I've been wanting to try. And of course I ate one as a snack on the way home :)

The LaraBar Cashew Cookie bar was my first experience with LaraBars. I've been seeing them forever, but I always thought they seemed pricey or too good to be true. I caved after reading about how much everyone loves them, though. And it was really good. Very soft with a nice cashew flavor. I seriously can't believe that it's just cashews and dates. Makes me wonder if I could make them...

When I got home, a little voice kept telling me to eat vegetables, but I really wanted to have something warm and sweet.

Whole wheat english muffin with Peanut Butter and Co. Dark Chocolate Dreams, 1/2 banana and a kiwi on the side. I'll have some veggies later :)

Time to tackle the rest of my chores!

Yoga Challenge!

I'm quite proud of myself because the first thing that I did today was YOGA! For the 31 Day Yoga Challenge. I did a 60-minute session on YogaToday. It was nice, but I don't think it's my favorite way to do yoga. I'm sure that I'll find a better niche by the end of the month.

Speaking of-- HAPPY MARCH! How did February go by so fast? It's crazy. I celebrated my Sunday and my first day of March with some French Toast:

That's Yoga Bread, eggs, skim milk.. topped with smart balance and syrup. Yumm. And some mango on the side.

I know that it's supposed to snow today, so I really want to get out of the house to run errands soon!
To do today:
  • Target run
  • Health food store
  • Trader Joes (if the other store doesn't have everything)
  • Laundry
  • Reading/studying for Drug Abuse exam
Hope I can do it! Stay warm!
